Why does this copper pot have a round bottom?
Clue in title a confectioners bowl as such quiet unusual, it has a round bottom so it can be stirred over a double boiler to prevent either chocolate or sugar burning.
Obviously only the biggest and most accomplished houses would of gone to this trouble so a rare find.

Actually it’s a meringue bowl the copper ions that are “released” by the bowl bind withnthe egg whites and make them whip higher and stiffer sooner
