In expression used in the antiques trade, not actually to describe trays, English being an obtuse language, but a collective noun to cover all items of cutlery and serving tools.
We in the UK have many unusual items of antique silver, such as oyster spoons and asparagus servers, and ham bone handles to aid carving.
Next time you hear the word flatware cutlery in essence is what it means.
